Meringues or Pavlova

High whip egg white

Meringue

½ cup high whip egg white
1 cup caster sugar

Preheat oven to 150 C
Beat egg whites to form soft peaks
Beat in caster sugar one spoonful at a time
Place spoonfuls of meringue onto a lined baking sheet and bake for 45 minutes.
Leave to cool in the oven with the door ajar
Serve with whipped cream.

Pavlova

Preheat oven to 150 C

Fold 2 teaspoons of cornflour and 1 teaspoon of white vinegar into ½ cup beaten high whip  egg whites.
Pile the mixture onto a lined baking sheet mounding it into a circle with a flat top and smooth sides.
Bake for 1 ¼ hours.
Cool in the oven with the door ajar. Invert onto a cake plate and top with whipped cream and fruit of your choice.
Use meringue mixture to top fruit pies, lemon tarts, bread pudding
